NYC Pizza Pro Finds Perfect Home in Portland

PORTLAND, Ore. (KOIN) — Miriam Weiskind transitioned from being a graphic designer to becoming an expert at New York City-style pizzerias, showcasing her keen attention to detail.

She’s set to launch a permanent pizzeria in Portland and can’t wait to showcase what she believes will become a top choice among local food enthusiasts and pizza aficionados.

I discovered a place perfect for making pizzas. Whenever I enter, it fills me with joy from ear to ear," Weiskind shared with KOIN 6 News. Her location is "not only encircled by pictures of my kin but also by my loved ones represented through various pies.

The spot, Yum’s of PDX This is the nickname that Miriam's mother bestowed upon her.

Her name was Hyla, which means frog. That's why you'll see a frog in our logo," she explained. "She will always be present. Additionally, the containers used for takeaway or leftover food will also bear 'For Mom.' You'll find her picture displayed throughout the restaurant.

When Yum’s of PDX Opening on May 1st near SE 7th and Belmont, she will serve neo-Neapolitan and wood-fired Sicilian pizzas. "We have an exquisite oven sourced from Naples," she stated. However, she has adapted the usage of this oven along with the ingredients to create her distinctive style.

"Neo-Neapolitan essentially involves taking everything that traditional Neapolitan pizzerias do and completely overturning their methods," she explained.

She mentioned that she devised an innovative method to gather funds for the startup from various locations across New York.

Twenty members will become part of the Silver Platter Club for either $2500 or $5000. The club comes with perks, of course.

“She mentioned that this platter essentially guarantees a free pizza every week for a year,” adding that each participant would have their name inscribed on the platter. ‘Our aim is to use this to offset any additional costs, ensuring we have all the necessary funds ready once we launch,’ she explained.

She mentioned that each pizza would cost anywhere from $18 to $26. According to her, the key lies in the dough. The preparation of her neo-Napoletana dough takes four days, whereas the wood-fired Sicilian pizza dough requires a seven-day process.

Absolutely, classic pizzas such as the Margherita will certainly be featured. However, the menu will also include elements from her youth, creating an entertaining environment where both children and adults can savor pizza and playfully crafted jokes, ensuring that everyone leaves with a grin triggered by the cleverly chosen titles.

A single pizza called "The Big Dill" features "pepperoni with fresh dill and homemade buttermilk ranch dressing," as per her statement. Another one is known as "the Italian Big Mac," essentially a cheeseburger pizza. Then you have "Ricotta Be Kidding Me."
